 EGG  FOO  YOUNG  CASSEROLE

--CASSEROLE:--

8 eggs, beaten
1 1/2 c. thinly sliced celery
1 (16 oz.) can bean sprouts, drained
1/2 c. nonfat dry milk powder
2 tbsp. chopped onion
1 tbsp. chopped parsley
1/2 tsp. salt
1/8 tsp. ground pepper

--MUSHROOM  SAUCE:--

2 1/2 tbsp. cornstarch
1 1/2 c. chicken broth, divided
1 tbsp. soy sauce
1 (4 oz.) can drained, sliced
   mushrooms
2 tbsp. sliced green onions

 Stir together all casserole ingredients; pour into greased 12 x 8 x 2 inch baking dish.  Bake at 350 degrees for 30 to 35 minutes or until knife inserted in center comes out clean.  To make the sauce, combine cornstarch with 1/4 cup broth.  Heat remaining broth to boiling in a saucepan; gradually whisk in cornstarch, broth mixture and soy sauce.  Cook, stirring until thickened and smooth; add mushrooms and green onions.  To serve, cut casserole into squares and top with mushroom sauce.  Makes 6 servings.

3 eggs
1/2 c. cooked pork
2 tbsp. chopped onion
1 c. bean sprout
2 tbsp. peanut oil
1 tbsp. soy sauce

 Beat eggs until thick; stir in sprouts, pork, onion and soy sauce.  Heat oil in skillet and pour in some of the mixture at a time, using spatula push eggs as they cool over meat to form patties.  When patties is firm, turn over to brown other side.  Serve with sauce.

 2 c. cooked, cold rice
3 beaten eggs
1 jar chicken-beef ready to use gravy
Soy sauce
2 tbsp. oil
1/2 c. favorite veggie or meat

  Add rice to beaten eggs.  Heat wok or fry pan medium.  Add oil.  Heat meat or veggie.  Add rice and egg mixture.  Cook until golden brown. Cut and flip.  Cook on second side until golden also.  Heat gravy in microwave.  Serve with soy sauce to taste.  4 servings.

1 pkg. Rice-a-roni, cooked, cooled
1 tbsp. soy sauce
1/4 c. chopped green onion
1 c. chicken, shrimp, beef or pork,
   cooked and cubed or shredded
4 eggs
8 oz. bean sprouts
1/8 to 1/4 c. celery, chopped

 Beat eggs with soy sauce; add sprouts, onions, celery and meat of choice.  Spoon onto hot griddle to make a 4 to 6 inch patty; brown, flip over with a spatula and brown other side.  Serve with sauce below. --SAUCE:--

2 tbsp. soy sauce
2 tbsp. cornstarch
2 c. water

 Mix soy sauce and cornstarch in small saucepan.  Over low heat, slowly stir in water; cook over low heat, stirring constantly, until desired thickness and bubbly.

1 1/2 c. (2 cans) bean sprouts
1/4 c. celery
1 1/2 c. cooked meat
3/4 onion, sliced then length
8 eggs
Salt and pepper to taste

 Mix bean sprouts, vegetables and meat.  Beat eggs slightly with fork, add salt and pepper, pour over other ingredients.  Stir gently with 2 forks.  Fry like pancakes in 1/8 inch oil.  5 minutes each. --GRAVY:--

3 c. boiling water
1/4 c. butter
1 tbsp. soy sauce
4 bouillon cubes
1/4 c. corn starch

 Boil water with cubes until dissolved.  Let stand.  Then add butter and cornstarch.

5 eggs
3/4 tsp. salt
1 c. diced cooked chicken
1 lb. can bean sprouts, well drained
1/2 can water chestnuts, drained &
   sliced thin
1/2 c. thinly sliced scallion, white
   & green
1/2 c. finely diced green pepper
1/4 c. salad oil

  Beat eggs and salt lightly.  Stir in chicken and veggies.  In a 10 inch skillet heat oil until it bubbles (moderate low heat).  Add mixture spreading evenly.  Cover tightly and adjust heat so bottom is browned and top is set in about 15 minutes.  Cut into 4 wedges.  Serve brown side up with Chinese gravy:  Mix: 1/4 tsp. salt 1 tsp. sugar 1 tsp. MSG   Gradually blend in 1 cup cold water.  Cook and stir until thick and clear.  Add soy sauce to taste.

6 eggs
1 c. bean sprouts
1/4 c. chopped onion
1/4 c. chopped celery
Salt & pepper
1 c. chopped ham, chicken or shrimp

  Beat eggs, mix in remaining ingredients.  Spoon out onto buttered skillet to make patties.  Flip and cook on other side.MUSHROOM SAUCE:  For Egg Foo Young
1 c. mushroom soup
3 tbsp. soy sauce

  Mix and heat.SWEET AND SOUR SAUCE:  For Egg Foo
   Young
1 tbsp. butter
1 lg. green pepper, cut into chunks
1 lg. can pineapple chunks, drained
   (save juice)
Salt to taste
1/4 c. sugar
1/8 tsp. ginger
2 tbsp. cornstarch
2 tbsp. soy sauce
1/4 c. vinegar
1/4 c. pineapple juice
1 c. chicken broth

6 eggs, beaten
1 tsp. soy sauce
1 to 1 1/2 c. bean sprouts, rinsed
   and drained
2 tbsp. vegetable oil
1/2 tsp. salt
3/4 c. cooked meat (chicken, ham,
   etc.)

  Combine eggs, salt, soy sauce, and beat well.  Add meat and bean sprouts.  Then heat oil in frying pan.  Drop 1/4 of egg mixture into pan and fry until brown. Flip and brown.  Repeat process with the rest of mixture.  4 servings.

1/4 c. chopped green pepper
1 can tuna, drained
1 can bean sprouts, drained
1 tsp. soy sauce
1/2 tsp. salt
6 eggs, slightly beaten

  Combine above ingredients.  Drop by spoonfuls into oiled frying pan.

OK "that's it, folks!"  The first one is always the hardest I guess.
